Here's an abbreviated recipe: 1) mix the dough 2) portion 3)wait for first rise 4) flatten into pan 5)wait for second rise 6) sauce 7) cook 8) cheese and top 9) final cook. Note that the final cook takes 4 to 5 minutes and goes right from the oven to the box to the customer.
